Monday Mourning

This morning is a sad one for me. Even though the temperature has reached a balmy 20 degrees. Even though I have today off!!! This morning marks the first day of the winter stretch with no more full days of sunday football. For me this is the darkest time of the year. I know, we still have the superbowl. (and wouldn't it have been more fun to have the 'bird bowl' if the ravens won) But it's just not the same. The superbowl is more of a commercial enterprise rather than good old fashion football. (~sigh) So to cheer me up last night the husband made me his famous 'faux' beer battered shrimp. Because I'm gluten intolerant, I cannot have the beer or the batter anymore. So what he does is mix g.f. (gluten free) chix broth with pamela's baking flour and some salt, pepper and garlic. He dunks those beautiful shrimp in the mixture and places them to fry in a generous amount of olive oil. I'm here to tell you it's just like the real thing. I'd tell you it's better, but it's been so long since I had the real thing it's hard to know. But the inside is moist and the outside is crisp...And quite frankly, it's pretty healthy, too!
