Animal yoga?

This is how my animals help me do yoga. This is Raven (who you know) and my cat merlin. Today is a day for self nurturance. Some yoga, some house cleaning and whatever else strikes my fancy before I have to go to work later this afternoon. As I'm writing this hubby (who got rained out of work this morning) just surprised me with a breakfast sandwich. I'm also working on perfecting a gluten free muffin recipe. Friends gave me almond flour from Italy. And I found a recipe on line for almond flour muffins...but not chocolate. So I added a bit of this (cocoa powder, fresh strawberries, honey, walnuts, almond milk....) and deleted a bit of that (lemon zest, dried cranberries) to the recipe I found which consisted of almond flour, eggs, baking soda, sea salt and oil. I've been flying by the seat of my pants with a bit of my italian ancestors whispering in my ear about quantities. But the first batch turned out darn good. Now my plan is to incorporate a new secret ingredient...apple sauce in place of the eggs. While having dinner with a friend the other night at flatbread, the staff was passing around free samples of a new addition to their menu. It was a little muffin/dessert of chocolate heaven. That just happened to be organic, gluten-free, and vegan. They told me the secret was applesauce. So, I'm gonna run with that!

  1. Yeah ... applesauce ... my mom used to replace some egg and fat for applesauce back when she used to bake. And have you ever tried ground flax seed as a nutritional sub for eggs? I have ... it's fascinating! It's a cool binder ... and rich in those good-fer-ya fatty acids!
