As someone who has grown up on spaghetti and meatballs, I find I need to search for new and exciting ways to have traditional spaghetti now that I don't eat meat. We all know the spaghetti squash trick where you put red sauce on the squash after you use a fork to the squash and it's like spaghetti. Well, I found an alternative. Take regular yellow squash, peel and grate it in a pan. Fry with garlic and olive oil. Then add your red sauce. Cook your spaghetti (I use quinoa because I'm gluten free). Put it all together....it's so good!
